Weird, but wonderful?? Bizarre, mais extra ??

Francois, who hosts the Le Pont Thursday evening extravaganzas, has come up with something of interest which was studied by the Thursday folk  quite recently.    It is a recipe for Bacon Jam!    Yes, jam made with bacon.  Sounds bizarre, but if we can have pineapple with ham and orange with duck, why not?   Here are the recipes, one in English and the other in French.   They are subtly different and end with different quantities – so you have a choice.  (Chilli jam is very good too)! François, qui anime nos soirées du jeudi soir, est arrivé avec quelque chose d’intéressant qui a été étudié récemment par les participants du jeudi soir : c’est une recette de confiture de bacon. Cela a l’air bizarre, mais si on peut avoir de l’ananas avec du jambon et de l’orange avec du canard, pourquoi pas ? Voici les recettes, l’une en anglais et l’autre en français. Elles sont différentes (ce n’est pas la traduction l’une de l’autre) et avec des ingrédients et des quantités différents, donc vous avez le choix de faire des tests!…

BACON JAM

Ingredients

  • •        450 g smoked bacon, cut into 2.5cm pieces
  • •        1 medium onion, diced
  • •        3 garlic cloves, roughly chopped
  • •        1 tbsp olive oil
  • •        45 g brown sugar
  • •        1 tbsp hot chilli sauce,
  • •        125 ml coffee
  • •        65 ml cider vinegar
  • •        85 g maple syrup
  • •        125 ml water

Method

  1. Fry the bacon in batches until lightly browned and beginning to crisp. Remove to paper towel-lined plate and set aside. 2. Fry the onion and garlic in another pan with a little olive oil on a medium heat until translucent. 3. Add the bacon to the onions and garlic. Add the rest of the ingredients and 125ml water. Simmer for 1 hour, stirring regularly. Add more water if needed.
  2. The jam is done when you can’t distinguish the onions from the bacon. Cool for about 15-20 minutes and then place in a food processor. Pulse for 2-3 seconds so that you leave some texture to the jam. Refrigerate up to 2 weeks

CONFITURE DE BACON

Ingrédients

  • •        115 g de bacon, haché finement
  • •        1 oignon, haché finement
  • •        45 ml (3 c. à soupe) de sirop d’érable
  • •        45 ml (3 c. à soupe) de cassonade
  • •        65 ml de vinaigre de cidre
  • •        Tabasco (au goût)
  • •        Poivre (au goût)
  • •        190 ml d’eau

Préparation

  1. 1.     Dans une poêle, faire revenir le bacon jusqu’à ce qu’il soit cuit, mais pas croustillant. Déposer dans du papier absorbant. Laisser le gras dans la poêle.
  2. 2.     Dans le gras de bacon, caraméliser l’oignon.
  3. 3.     Dans une casserole, mélanger le bacon, l’oignon et le reste des ingrédients (sauf l’eau). Amener à ébullition.
  4. 4.     Baisser le feu (à feu doux). Toutes les 30 minutes, ajouter un tiers de l’eau.
  5. 5.     Transférer la confiture dans un bol et pulvériser au robot culinaire quelques secondes pour obtenir la consistance désirée.
