As promised, here is the recipe upon which our Le Pont event was based. The proportions of the ingrédients for the sauce can be varied according to taste!!
Ingrédients: (for 9 persons)
- 100grs mayonnaise
- 75grs mango chutney
- 1 tablespoon curry powder
- 1 dessertspoon lime zest
- 4 tablespoons fresh lime juice
- Salt to taste
- 500grs skinless, boned chicken breast – cooked and diced.
Method: In a large bowl, whisk together the mayonnaise, chutney, curry powder, lime zest, lime juice and salt. Add chicken and toss with the dressing until well coated. Cover and chill until serving.
