Coronation Chicken – La recette

As promised, here is the recipe upon which our Le Pont event was based.   The proportions of the ingrédients for the sauce can be varied according to taste!!


Coronation Chicken

Ingrédients: (for 9 persons)

  • 100grs mayonnaise
  • 75grs mango chutney
  • 1 tablespoon curry powder
  • 1 dessertspoon lime zest
  • 4 tablespoons fresh lime juice
  • Salt to taste
  • 500grs skinless, boned chicken breast – cooked and diced.

Method:  In a large bowl, whisk together the mayonnaise, chutney, curry powder, lime zest, lime juice and salt.   Add chicken and toss with the dressing until well coated.   Cover and chill until serving.
